SERVES – 1
In a bowl whisk 2 whole eggs in a bowl.
Add some colour e.g., a handful of kale or spinach, sliced tomato, mushrooms.
Pour mixture in a heated, well-oiled pan fry. Stir and cook until eggs are firm (this will not take long at all). You can also use a microwave and stir halfway through (it will only take 1 1/2 to 2 minutes)
Add a squeeze of lemon and freshly cracked black pepper. Serve with 1-2 slices rye or sourdough if needed.
For extra protein: add a scoop of quark (European cottage cheese)
