This pastry-less spanakopita combines fresh greens & eggs to make a perfect breakfast. Make this on the weekend for a great go-to breakfast, lunch or snack during the week!.
This takes less than 10 minutes to whip it….no joke!!
SERVES – 4
1/3 cup (80ml) extra virgin olive oil
1 onion, finely chopped
150 g silverbeet, finely chopped
150 g mixed greens (rocket, spinach etc)
Freshly milled sea salt, to taste
Freshly ground black pepper, to taste
80 g feta cheese, crumbled
4 eggs, lightly beaten
Preheat oven to 180C and grease a flan dish.
Heat olive oil in a large saucepan over medium heat and sauté onion until translucent. Add greens and stir until wilted. Season with salt and pepper.
Transfer greens to prepared dish and sprinkle over feta. Pour over eggs.
Bake for 20 minutes, or until egg is cooked through and lightly browned.

- Side salad
- Fresh avocado & Tomato drizzled with a little lemon
- Fresh tomato salsa scented with a little finely chopped red onion and coriander
- Steamed asparagus with a hint of lemon and black pepper
- Sautéed mushroom with a little sea salt, black pepper and garlic.
