Quinoa Porridge with Roasted Nuts

Quinoa Porridge

Get your day to healthy start with this delicious quinoa porridge with roasted nuts recipe.

 

SERVES – 2


 

 

INGREDIENTS


  • ½ cup quinoa

  • 1 cup water

  • 6 chopped prunes or 2 Tbsp raisins

  • ½ cup milk of your choice

  • 1 Tbsp home roasted nuts e.g., almonds or hazelnuts roughly chopped

  • Drizzle of pure maple syrup or honey

 

METHOD


Rinse the quinoa well in a sieve under running water. Put in a saucepan with the water and bring to the boil. Reduce the heat to a gentle simmer and cook for about 10 minutes.

When the quinoa is almost cooked add the milk and prunes or raisins and simmer for another 5 minutes.

Add the nuts and mix. Serve drizzled with the maple syrup (or honey).

Tips: Try different combinations of dried fruit and nuts e.g. apricot and almond, date and walnut etc

Once the quinoa is warm (not hot), add some protein powder and mix well.
