    Can’t find a bread that you really like? Try Luiseach bread healthy recipe, you might be surprised how good is it!

     

    SERVES – 1 load


     

    INGREDIENTS


    • 220g oats
    • 2 big or 3 medium banana
    • 2 eggs
    • 2 tbsp honey
    • 90g mixed seeds
    • 7 tbsp apple cider vinegar
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda

     

    METHOD


    Preheat your over at 180 degrees.

    Place all the ingredients in a blender and mix until you start having a soft dough. For more crunchy, don’t blend too much in order to keep some texture.

    Pour the mixture in a tray and bake for 35 minutes.

  • Greenleaf Salad Wrap

    Who needs bread when you can have your sandwich wrapped in mineral-rich cos lettuce leaves? One of the real powerhouses of nutrition is the live sprouts, an excellent source of minerals, amino acids and phytochemicals. Add living sprouts to as many meals as you can.

     

    SERVES – 1/2


     

    INGREDIENTS


    • 4 large cos lettuce leaves
    • 8 tablespoon raw hummus
    • 1 cup baby spinach
    • 1 cup live sprouts, such as broccoli or alfalfa
    • 1 small carrot, peeled and grated 1 small beetroot, peeled and grated 1 large ripe tomato, thinly sliced
    • 1 avocado, sliced
    • salt and ground black pepper
    • cooked skinless chicken breast (optional)

     

    METHOD


    Remove 4 large lettuce leaves and remove the tough stem of each leaf.

    Put 2 leaves on each plate, placed on top of each other so the stem ends are on opposite sides.

    Spread half the hummus down the centre of each set of leaves.

    Arrange the baby spinach on top of the hummus.

    Layer the sprouts, carrot and beetroot over the hummus on each set of leaves, then top with the sliced tomato and avocado and season with salt and pepper.

    Add the sliced chicken breast at this point if you are going to use it.

    Roll the wrap, starting at one of the stem ends and rolling the wrap up lengthwise.

  • Greek Style Zucchini Slice

    A healthy zucchini vegetarian recipe. A Greek-style slice that’s good hot or cold. You can add garlic and/or herbs for extra flavour.

     

    SERVES – 6


     

    INGREDIENTS


    • 6 – 10 eggs – whisked
    • bunch of shallots or 1 onion finely sliced 
    • 4 large zucchini grated and squeezed excess moisture out
    • 1/3 cup olive oil
    • 250 grams feta cheese
    • 1 cup self-raising GF flour
    • bunch flat leaf parsley finely chopped
    • Rind of one lemon
    • teaspoon each of dried dill & dried mint & oregano
    • salt and pepper

     

    METHOD


    Preheat oven to 180′.

    Grease a baking pan w olive oil.

    Prepare the zucchini, add parsley, rind, herbs, salt and pepper and crumbled feta.

    Mix flour and oil into the eggs & pour this mixture into the zucchini.

    Pour mixture into baking pan & bake in the oven for approx. 40 – 50 min – until golden brown and cooked in the centre.

    Serve with salad.
